Macaroni Pie

Prep Time: 20 mins Cook Time: 45 mins Serves: 8


Ingredients:

2 cups Dry macaroni noodles

½ cup Onion, small dice

½ cup Evaporated milk

1 cup Milk

⅓ cup Sour cream

2 Eggs

2 ½ cups Old cheddar cheese, grated

1 ¼ cups Mild cheese (like colby), grated

4 tbsp Butter

2 tsp Salt

1 tsp Black pepper


Topping

½ cup Bread crumbs

¼ cup Parmesan cheese or nutritional yeast


Directions:

1. Preheat oven to 350 F.

2. Cook macaroni in a pot of boiling salted water according to package instructions. While the noodles are cooking, grease a 13 x 9 inch glass casserole dish with butter. Once cooked, strain but do not rinse the noodles.

3. Transfer the cooked noodles into the prepared casserole dish. Stir in the onions, butter and cheeses.

4. In a small bowl, whisk together the sour cream, milk, evaporated milk and eggs. Pour over the macaroni and cheese mixture in the casserole dish. Combine all the ingredients together.

5. Top with the breadcrumbs and parmesan cheese and bake for 30 - 40 minutes until the cheese is melted and the casserole looks set.

6. Allow to rest for 10 minutes before cutting.
