Serves 4-6
Ingredients:
4 cups Turnip, peeled and cut into cubes
4 cups Carrots, peeled and cut into cubes
2 cloves Garlic minced
1/4 cup Unsalted butter or vegan butter
2 cups Vegetable broth or chicken broth
Salt and pepper to taste
Directions:
1. Sauté the garlic in a cooking pot for a couple of minutes and add the rutabaga and carrots to the same pot.
2. Add 2 cups of broth and cover and let simmer for 30 minutes. Taste the broth to see if there is enough salt for vegetables to cook.
3. Strain once cooked and reserve the broth.
4. Use an immersion blender to blend vegetables together and add ¼ cup butter, more vegetable broth as needed to have a pureed mixture.
5. Salt and pepper to taste
