2 large cucumbers, thinly sliced crosswise or in ribbons with a spiralizer
1 tsp sugar
½ medium red onion, thinly sliced
¼ cup rice vinegar
Coarse salt and ground pepper
Preparation:
In a large bowl, combine cucumbers, red onion, sugar, and rice vinegar. Season with salt and pepper and toss to combine. Let it sit in refrigerator for 30 minutes before serving.
