Chicken Fricot with Dumplings

1 Whole chicken

2 tbsps Butter

1 Onion, chopped

1 tbsp White flour

10 cups Water

1 tbsps Savory

5 cups Potatoes, diced

2 cups Carrots, diced

1 cup Celery, chopped

1 tbsp Salt

1 tsp Pepper and to taste

For dumplings:

1 cup Flour

½ tsp Salt

3 tsps Baking powder

1 cup Water


Directions:

1. Simmer chicken in a large cooking pot with 10 cups of water, for 30 minutes. Remove the chicken and let cool. Chicken will be taken apart once cool, cut into pieces to add to the soup later.

2. Sauté onion until translucent. Add flour and cook for 1-2 minutes more.

3. Add onions, potatoes, carrots, celery and savory to the pot of broth. Simmer for 30 minutes and add chicken half way through.

4. In the meantime, mix the dumpling mixture. Place 1 cup of flour with ½ tsp of salt and 3 tsps of baking powder in a bowl and add 1 cup of water (no more)

Drop by teaspoonful in the pot of broth and cover the pot and cook for 7 minutes. Avoid lifting the lid so dumplings cook through
