2 cups raw kale, shredded
2 carrots, shredded
1 apple, peeled, cored, and sliced
¼ cup sunflower seeds, roasted
1/4 cup extra virgin olive oil
2 tbsp. apple cider vinegar
2 tbsp. raw honey or maple syrup
1 tbsp dijon mustard
1 tbsp. lemon juice
Sea salt and freshly ground black pepper
Preparation:
In a salad bowl, combine the green cabbage, carrots, kale, apple
In a bowl, whisk the olive oil, apple cider vinegar, honey, and lemon juice; season to taste with salt and pepper.
Drizzle the vinaigrette over the salad and toss until well blended.
