Coconut Macaroons: June 2019 Week 1

Prep Time: 15 mins   Total Time: 30 mins   Serves: 8-12


Ingredients:  Adapted from chocolatecoveredkatie.com

1 tbsp almond meal 

2 tbsps all-purpose flour

1/2 cup + 1 tbsp milk of choice

Pinch of salt

3 ½ tbsps pure maple syrup, honey, or agave 

1/4 tsp pure vanilla or coconut extract


Preparation: 

Preheat oven to 350 F. Stir together all ingredients and make sure mixture is holding itself together like the consistency of dough. Add more flour if needed to achieve that consistency. Scoop by tablespoonful onto a cookie sheet or use a melon baller or ice cream scoop for a round macaroon. 

Bake on the center rack 15 minutes. 

Let cool completely before removing from the tray. 

If desired, dip in melted chocolate
