2 cups all-purpose flour
1/2 teaspoon salt
3/4 cup water
3 tablespoons olive oil
Preparation:
In a large bowl, combine flour and salt. Stir in water and oil. Turn onto a floured surface; knead 10-12 times, adding a little flour or water if needed to achieve a smooth dough. Let rest for 10 minutes.
Divide dough into eight portions. On a lightly floured surface, roll each portion into a 7-in. Circle. (can be made smaller for small tortillas)
In a greased cast-iron or other heavy skillet, cook tortillas over medium heat until lightly browned, 1 minute on each side. Keep warm.
Note: If you are making many tortillas and would like to use the oven, set oven temperature to 350 degrees F and bake for 5 mins. Flip the tortilla over halfway through cooking if not using a convection oven. You won’t get the browning of the tortillas as you would in a skillet.
