Jerk Chicken Marinade

Prep Time: 10 mins + 9hrs to marinate Cook Time: 60 mins Serves: 8


4lb Chicken legs cut into pieces skin on.

(1 lime + 1 tsp salt prior to marinating chicken pieces)

1 pc Onion, rough chopped

3 cloves Garlic

2 tbsp Fresh thyme

1 tbsp 5 spice powder

1 tsp Nutmeg, ground

1 tbsp All spice, ground

2 pc Scotch bonnet peppers

(remove some of the seeds for less spicy)

2 tbsp Brown sugar

2 tbsp Dark soy sauce

1 tbsp Neutral oil

1 pc Lime, juiced

1 tsp Salt

½ tsp Black pepper


1. Chop the shallots/scallions and the ginger finely. Add the salt to the scallions and ginger and mix together in a large bowl.

2. Heat the oil in a wok until it begins to smoke, then pour it into the large bowl with the ginger and scallions. Stir lightly. Let cool to room temperature and serve. Keeps 2-3 weeks covered and refrigerated.
