Peas Pulav (Rice)

1.5 cups aged basmati rice 

2.5 cups water 

½ cup peas 

1/2 tsp salt 

2 tbsp oil 

1 medium size onion finely diced 

1 stick cinnamon 

10 cloves 

5 pods green cardamom 

1 bay leaf 


Directions: 

First rinse rice thoroughly till water runs clear, then leave to soak in lukewarm water for about 30 minutes. 

Step 1: Heat oil and add cinnamon, cloves, cardamom and bay leaf to hot oil. Sauté for about a minute till fragrant. 

Step 2: Add diced onion and stir fry till lightly brown (about 4 – 5 min) 

Step 3: Add water and salt and bring to a boil. 

Step 4: Add rice and peas and bring temp down to low and cover pot. 

Step 5: Leave untouched for 25 minutes. 

Step 6: Switch off heat and leave covered for another 15 minutes. 

Step 7: Carefully fluff with fork, taking care not to break rice grains and serve in bowl. When making large quantities of rice, either use the drain method or make in batches of a maximum of 3 cups rice each.
