Rhubarb Mango Pepper Salsa: July 2019, Week 5

Ingredients:   Adapted from cityline.tv


1 chopped mango, chopped

2 stalks of rhubarb, finely chopped

1 chopped sweet red pepper, finely chopped

1/4 cup tightly packed and chopped cilantro

1 clove of finely chopped garlic

1 jalapeno, chopped (include seeds for extra spicy flavor)

1 lime, juiced

1 tbsp extra-virgin olive oil

1/2 tsp sea salt


Preparation:

In a small bowl combine all the ingredients and mix together. Serve with tacos or eat with tortilla chips.
