2 cups fine semolina (sooji)
1.5 cups sugar
6 cups water
10 pods green cardamom peeled and crushed
Few strands of saffron (optional)
Pan fried cashews (optional)
Raisins/currants (optional)
Slivered almonds for garnish (optional)
½ cup oil
Step 1: Mix sugar in water and bring to a boil on slow heat in a sauce pan (about 20 minutes). Add saffron when water boils (optional)
Step 2: Dry roast semolina in a pan for about 20 minutes continuously stirring to avoid burning.
Step 3: Add oil to semolina and mix well for about a minute.
Step 4: Turn heat low, add sugar water, ground cardamom and pan fried cashews (optional) and raisins, currants (optional) to semolina and cover immediately. Mix once after about 3 minutes and leave covered on very low heat for 10 minutes till water is fully absorbed.
Step 5: Stir well and serve hot, garnished with slivered almonds.
This dessert can also be eaten with Puris. Fold the puri like a mini taco and fill in some sheera. It is called Sheera Puri or Halwa Puri.
